Stella Maris, chef Tateru Yoshino’s highly acclaimed restaurant in Paris, earned its stellar reputation based on the quality of its French cooking (with very subtle Japanese influences) and excellent game dishes. So it’s no surprise that at Yoshino’s eponymous Tokyo restaurant, the food is both equally polished and yet highly personal. It is creative but not showy, and built around expertly assembled, quality seasonal ingredients. The roasted quail stuffed with foie gras
and boned lamb with parsley are as good as any you’d find in France. The lunch and dinner prix fixe menus are superb, and the breathtaking 25th-floor view of Tokyo Bay is a delight.
