After having worked at such renowned establishments as the Treasury at the Inter-Continental Hotel, Rockpool and Tetsuya’s in Sydney, and Cilantro in Kuala Lumpur, co-owner, executive chef and culinary artist Ken Hoh has created a menu that is sophisticated but never snobbish, amusingly clever but never pert. Consider these talented creations: scallop carpaccio with truffle vinaigrette, etuve of estuary garoupa, double cooked crispy duck with a balsamic and tamarind glaze, and white asparagus and wilted spinach with sea urchin butter sauce.
